# Expert Suggestions:

01 -
  • The way the earthy pesto fuses with gooey mozzarella is like a flavor secret hiding in plain sight.
  • Quick enough to make on a whim and impressive enough to elicit delighted “mmm” sounds from whoever is lucky enough to snag a sandwich.
02 -
  • If the tomatoes are too juicy, the bread gets soggy, so pat slices dry with a paper towel.
  • Brushing bread with butter right to the edges protects the crust and ensures a uniform, golden crunch.
03 -
  • Chilling mozzarella briefly before slicing keeps it from getting too runny as it melts.
  • A thin spread of pesto on each interior side gives every bite vibrant flavor without overpowering the cheese.
