# Directions:

03 - Remove from heat and stir in the bloomed gelatin, whisking until completely dissolved and no lumps remain.
04 - Add the vanilla extract and mix thoroughly until well combined.
05 - Pour the mixture evenly into 4 serving glasses or ramekins. Let cool to room temperature, then cover and refrigerate for at least 4 hours until completely set.
06 - In a small saucepan, combine the chopped strawberries, sugar, and lemon juice. Cook over medium heat for 5 to 7 minutes, stirring occasionally, until the strawberries soften and release their juices.
07 - Mash the berries slightly, then let cool. For a smoother consistency, blend until reaching desired texture.
08 - Spoon the strawberry sauce over each set panna cotta and garnish with fresh strawberries and mint leaves if desired.
