01 - 2 large zucchini, ends trimmed

02 - 1/2 cup marinara or pizza sauce

# Directions:
01 - Preheat the oven to 400°F and line a baking sheet with parchment paper.
02 - Using a mandoline slicer or sharp knife, slice zucchini lengthwise into thin strips approximately 1/8 inch thick.
03 - Arrange zucchini strips on the baking sheet, lightly salt them, and let sit for 10 minutes to draw out moisture, then pat dry with paper towels.
04 - Spread a thin layer of marinara sauce evenly over each zucchini strip.
05 - Sprinkle shredded mozzarella, some Parmesan, and desired fillings such as pepperoni, olives, and diced bell peppers over the strips.
06 - Sprinkle dried Italian herbs, salt, and freshly ground pepper over the strips.
07 - Carefully roll up each zucchini strip tightly and place seam-side down in a greased baking dish.
08 - Optionally spoon the remaining marinara sauce and cheese over the assembled roll-ups.
