This is a go-to recipe I often make when I want a filling meal with minimal fuss. The Instant Pot really makes the beef tender and flavorful in no time.
Ingredients
- Beef: 2 lbs (900 g) beef chuck, cut into 1.5-inch cubes, 1 tbsp all-purpose flour, 1 tsp salt, 1/2 tsp black pepper
- Vegetables: 2 large carrots peeled and cut into thick slices, 2 parsnips peeled and cut into chunks, 2 medium potatoes peeled and cut into 1-inch pieces, 1 large onion chopped, 3 cloves garlic minced, 2 celery stalks sliced
- Broth & Flavorings: 3 cups (720 ml) beef broth, 2 tbsp tomato paste, 2 tbsp Worcestershire sauce, 1 tsp dried thyme, 1 tsp dried rosemary, 2 bay leaves
- To Finish: 1 tbsp cornstarch mixed with 2 tbsp cold water (optional for thickening), fresh parsley chopped for garnish
Instructions
- Step 1:
- In a large bowl, toss the beef cubes with flour salt and pepper to coat evenly.
- Step 2:
- Set the Instant Pot to Sauté mode. Add a drizzle of oil then brown the beef in batches until well-seared on all sides (about 5 minutes per batch). Transfer browned beef to a plate.
- Step 3:
- Add onion garlic and celery to the pot. Sauté for 2 to 3 minutes until softened scraping up any browned bits from the bottom.
- Step 4:
- Stir in tomato paste and cook for 1 minute. Return beef to the pot.
- Step 5:
- Add carrots parsnips and potatoes. Pour in beef broth Worcestershire sauce thyme rosemary and bay leaves. Stir to combine.
- Step 6:
- Secure the Instant Pot lid and set to Pressure Cook (Manual) on high for 35 minutes.
- Step 7:
- Allow a natural pressure release for 10 minutes then quick release any remaining pressure.
- Step 8:
- Remove bay leaves. If you prefer a thicker stew stir in the cornstarch slurry and simmer on Sauté mode for 2 to 3 minutes until thickened.
- Step 9:
- Taste and adjust seasoning as needed. Garnish with chopped parsley before serving.
