Ingredients
- Ground beef: 2 lbs (900 g) ground beef (80/20 recommended)
- Shallots: 8 large peeled and finely sliced
- Red bell peppers: 2 diced
- Diced tomatoes: 2 (14.5 oz/410 g) cans
- Kidney beans: 2 (15 oz/425 g) cans drained and rinsed
- Black beans: 1 (15 oz/425 g) can drained and rinsed
- Garlic: 4 cloves minced
- Jalapeño: 1 seeded and finely chopped (optional for heat)
- Beef broth: 1 cup (240 ml)
- Tomato paste: 2 tbsp
- Chili powder: 2 tbsp
- Ground cumin: 2 tsp
- Smoked paprika: 1 tsp
- Dried oregano: 1 tsp
- Cayenne pepper: 1/2 tsp (optional)
- Kosher salt: 1 1/2 tsp
- Freshly ground black pepper: 1/2 tsp

Instructions
- Step 1:
- In a large skillet over medium-high heat brown the ground beef until no longer pink breaking it up as it cooks Drain excess fat if desired.
- Step 2:
- Add the cooked beef to the slow cooker.

- Add the sliced shallots diced bell peppers diced tomatoes (with juices) kidney beans black beans garlic and jalapeño to the slow cooker.
- Step 4:
- Stir in the beef broth and tomato paste.
